TITLE HACCP and the Law

DESCRIPTION This study-unit shall consist of topics relevant to the principles of HACCP and food safety law, mainly in the practical applications in relation to the working practice and the legal obligations towards the preparation of safe food. The study-unit will explore the application of HACCP in all facets of production, processing, storage, transportation, wholesale, catering, supply and retail of food.

Study-unit Aims:

This study-unit aims to bring the knowledge of HACCP and food safety management in the real practical application. It also aims to explore the implementation of systems and processes in food operations in order to prevent food borne illnesses and to protect consumer health.

Learning Outcomes:

1. Knowledge & Understanding:

By the end of the study-unit the student will be able to:
- Assist in hazard analysis;
- Monitor food hygiene standards;
- Develop HACCP training especially on-the job training;
- Effectively supervise food handlers on HACCP issues;
- Apply standards of HACCP in accordance with policies and procedures within legal & company guidelines;
- Contribute to the development of HACCP plans and policies within legal and company guidelines.

2. Skills:

By the end of the study-unit the student will be able to:
- Develop HACCP plans;
- Supervise Food preparation to EU standards as described by the laws EC 852/2004 , EC 178/2002 and EU 1169/2011;
- Assist in HACCP audits.
