DESCRIPTION This study-unit, spread over three days will comprise the preparation of a special menu, engineered to special requirements. The candidates will prepare and produce the menu to a set standard. On the last day the candidates will explain their rationale for the decisions taken and also describe the menu, the preparation procedures and the actual production of the menu.

Study-unit Aims:

The aims of this study-unit are to verify and validate the competences of the candidates in the preparation and production of an engineered menu to the highest levels in compliance to the legal obligations and special consumers requirements.

Learning Outcomes:

1. Knowledge & Understanding:

By the end of the study-unit the student will be able to:
- Understand the dietary requirements of consumers with health-related conditions and their right to enjoy culinary experiences without unnecessary anxiety, which could effect their quality of life;
- Develop the mechanics of food preparation and production at mentoring level and relay to other staff the information that is relevant to special consumers requirements.

2. Skills:

By the end of the study-unit the student will be able to:
- Deliver written specific food related Standard Operational Procedures (SOP) to staff;
- Identify prerequisites to execute defined food requirements for clients with special dietary needs;
- Assess staff on job performance when preparing special dietary requirements for specific consumers and the legal obligations.
