Abstract: Propyl gallate (IUPAC name: 3,4,5-trihydroxybenzoate) is the propyl ester of 3,4,5-trihydroxybenzoic acid. It is an odorless, white or creamy-white, crystalline solid. It is soluble in water, propane-1,2-diol, ethanol, and ether and the melting point is 146– 150°C (EFSA, 2016). The chemical structure of propyl gallate is shown in Fig. 3.7.1. [excerpt]
