Abstract: This article traces the evolution of the culinary hub of Malta: The Valletta Markets. At its inception back in the 19th century, it was presented as an open space designed by Hector Zimelli, which included 153 stalls, 63 cellars and a central skylight. On the 23rd of November 1861, ‘Is Suq Tal-Belt’ was inaugurated with the ‘Market Regulations’ (image attached) as per the British Governor of the time. It goes onto to map the different Socio-economic & Political factors that compelled/stimulated redevelopments with each passing decade. Accompanying the piece are photographs and a copy of the Market Regulations Publication from 1861.
