Abstract: In the earlier days salt was essential as it was used not only to flavour food but also to preserve it and cure it. It was also used to treat wounds, an essential ingredient in the time of the Great Siege. The Knights of Malta had invested heavily in the production of salt and salt pans in Malta, which they then exported for profit.
