Abstract: | This study outlines the historical and cultural influences that have contributed towards the eating patterns of the Maltese population. The Secondary Education Certificate in Home Economics emphasises the use of traditional Maltese recipes during practical and examination sessions. In order to develop a Traditional Maltese recipe book for this purpose, five elderly people were interviewed to gain an insight into traditional eating practices. A survey of fifty Maltese households was also carried out to identify current eating practices and lifestyles. Fifty traditional Maltese recipes including snacks, soups, rice and pasta dishes, vegetable dishes, meat, poultry and game dishes, fish dishes, bread, yeast and pastry dishes and desserts were selected and modified to be in line with the Maltese dietary guidelines, to help reduce the risk of common diet-related diseases. Each recipe contains a nutritional analysis of fibre, fat, cholesterol, sugar and calcium content as well as suggestions for variations and a coloured photograph showing the prepared dishes. The recipe book also contains a list of locally available seasonal produce. Thirty-four recipes were tested and evaluated by 279 Home Economics pupils and eight Home Economics teachers. Although the current eating patterns of the Maltese population have changed considerably, favourable comments were obtained from the evaluation of the recipes, highlighting the urgent need for such healthy traditional recipes to be used in secondary schools. |
