TITLE Ethics in Food and Nutrition

DESCRIPTION After a short introduction on ethical theory, this study-unit will introduce students to the ethical issues food presents from farm to table. Issues include food scarcity (hunger), safety and security and how these create ethical responsibilities on governments (national/international), companies and consumers. Since consumer sovereignty, at least in the case of food, is not possible, the importance of (inter-) governmental regulation is highlighted.

Study-unit Aims:

The study-unit aims to expose students to ethical theory and decision making, leading them to apply this to selected issues in the planning, production, marketing and consumption of food.

Learning Outcomes:

1. Knowledge & Understanding:

By the end of the study-unit the student will be able to:
(1) Appreciate the relevance of an ethics of responsibility in the area of food and nutrition;
(2) Apply ethical theories and decision making to particular circumstances in the food industry.

2. Skills:

By the end of the study-unit the student will:
(1) Become aware of the importance and relevance of ethics in food and nutrition;
(2) Gain the necessary skills of observation and analysis in the food production process;
(3) Be able to apply ethical theories to practice and particular scenarios.
