Abstract: In a country where traditions are followed, and regarded with pride, innovation is sometimes looked at with discerning eyes. This study provides a look at the traditional culinary use of carob. Information relating to the traditional uses of carob, any political or socio economical aspects in reference to carob and the possibility to sustain the carob tree are stated in this paper. Alternative uses for carob are also investigated, teaching the researcher that carob was mainly used as an emergency food source, making it to be regarded only as a secondary food item. That is why the researcher wants to show the versatility of carob by illustrating a menu with the incorporation of carob in modern dishes. This essay explores a few different aspects all relating to carob and its culinary uses, some of which are intangible.
