Abstract: Milk production has always been an important food source in Malta and cattle rearing provided meat and milk to feed its poor population. It provided Malta’s poor population with essential products to guarantee a modest living. Nowadays, the cheeselet has become a local speciality in demand by the local population and tourists. This reports looks into the process of cheelselet production, providing an insight into the rearing of small ruminants and problems encountered in the production of disease-free milk
