| Abstract: | This report’s aim is to give an accurate detail of the Maltese sheep and goat holdings that produce milk for the production of traditional cheeselets. It includes the history and the culture behind this artisanal product and also an explained production process and nutritional values according to the different types of cheeselets. The main topic is the comparison of different practices between small and large producers that include housing, nutrition and daily running of the farms based on different areas in Malta and Gozo and a detailed process of how to upgrade a farm to an approved establishment. |
