Abstract: The 'pastizz' roughly translating to savory cheesecake is a subject of great intrigue within the Maltese islands. For beneath the mountain of carbohydrates that lie within it also sits a rich cultural tradition. Foremost amongst said tradition being the artisanal bakers who make these culinary gems. In this article we delve into the story of a pastizzi shop that has been passed down through the family lineage for generations.
