Abstract: | Gozo is rich in its flocks and merry with its vineyards - wrote the Roman poet Marcus Valerius Martialis (c. AD 40-1 02). This praise was showered on the produce of the flocks and vines of Gozo in the first century of the present era, but cheese must have certainly been produced on the island since prehistoric times. It is an important item in the diet of almost all people, because it is relatively easy to make and can be preserved for fairly long periods of time. Appropriately enough, the Ministry of Agriculture and Fisheries of the Government of Malta, during the talks for Malta's accession to the European Union, requested to retain the general and particular requirements for the manufacture of cheese due to its traditional characteristics.
