Abstract: The author has developed a Hazard Analysis and Critical Control Point (HACCP) system that fits the purpose of the Institute and serves as a showcase for the catering industry. This was the result of findings through research, interviews and questionnaires distributed to external stakeholders, ITS staff and students at different levels, which were then published in a Master’s thesis.
