| DESCRIPTION | This study-unit aims to expand the knowledge gained in a previous study unit (FEH1004-General Food Microbiology), in a more advanced level. Special topics within the field of Food Microbiology will be discussed such as Risk Assessment, Predictive Microbiology, Interactions between food-related microorganisms and Quantitative Microbiology. Study-unit Aims: The study-unit aims to advance students' knowledge in food microbiology and familiarise them with the principles of quantitative microbiology, microbial ecology and complex interactions between food components and microorganisms in food systems. Learning Outcomes: 1. Knowledge & Understanding By the end of the study-unit the student will be able to: - Predict the fate of certain microorganisms during food processing; - Discuss the impact of food processes in the microbial ecology of foods; - Outline the factors associated with microbial responses; - Discuss and select the most suitable analytical and diagnostic technologies for microbial detection. 2. Skills By the end of the study-unit the student will be able to: - Perform microbial risk assessment; - Demonstrate literacy in using software for predictive microbiology.
