| DESCRIPTION | This study-unit is based on a local Food Industry placement which is mainly a structured, supervised and mentored period of experiential learning enabling the student to develop the necessary competencies in Food Science. Study-Unit Aims: The study-unit aims to familiarise students with working in a food industry environment, providing a clear understanding of the food business operations and getting exposure in the research and development of new food products. Learning Outcomes: 1. Knowledge & Understanding: By the end of the study-unit the student will be able to: - Demonstrate professional behaviour required when working as a food scientist; - Appreciate the HACCP Principles, required in every food-related business; - Apply theoretical knowledge gained throughout the undergraduate studies to practical scenarios; - Develop reserach expertise in areas of Food Product Development relevant to the host Food Industry; - Write SOPs related to the industry area involved; - Perform internal audits; - Identify International Standards relevant to the line of work. 2. Skills: By the end of the study-unit the student will be able to: - Design schemes for QC testing of certain food products; - Perform analytical tasks, in a particular product or product line; - Analyse data derived from Quality Control testing; - Interpret laboratory results; - Improve critical-thinking ability and the problem-solving skills; - Evaluate Good Hygiene and Good Manufacturing practices; - Advance in technical skills; - Review documentation related to Quality Control, Quality Assurance, HACCP, external testing, accreditation schemes.
