An Introduction to Food Supply Chain Issues

Part of the study-unit focuses on sustainable food supply chains examininig how sustainable practices - from production to distribution, can reduce environmental impact, enhance food security, and promote ethical sourcing. These discussions emphasise the importance of building resilient and responsible food systems for a more sustainable future. Another aspect of the study - unit focuses on how reducing waste along the food supply chain contributes to sustainability by conserving resources, lowering greenhouse gas emissions, and improving food security. We explore strategies such as waste prevention, valorization of by-products, and circular economy approaches to make food systems more efficient. This aligns with the SDGs by promoting responsible consumption and production. Lastly, a lecture is dedicated to the production of organc foods. A discussion is made on how organic farming practices contribute to sustainability by reducing chemical inputs, promoting soil health, and enhancing biodiversity. By outlining the environmental, economic, and health impacts of organic food production, we highlight its role in sustainable food systems. This discussion aligns with SDGs by emphasizing eco-friendly agriculture and responsible consumption.

Food Processing
UG
Lectures on innovative green technologies for food processing focus on sustainable methods that reduce energy consumption, minimise waste, and improve food safety and quality. By exploring techniques such as cold atmospheric plasma, supercritical CO₂ processing, and UV treatment, we address how these technologies contribute to environmental sustainability and align with the Sustainable Development Goals (SDGs). These approaches support a more efficient and eco-friendly food system while maintaining product integrity and consumer health. Additionally, a lecture is dedicated to food packaging materials where besides outlining the pros and cons of each type currently in use, we also explore how innovative, eco-friendly packaging solutions help reduce environmental impact by minimising plastic waste, improving recyclability, and utilizing biodegradable or renewable materials. We examine how these materials contribute to a circular economy while maintaining food safety and quality.

This is a guided practicum in which students observe and explore (and interact with) a locality in Malta (incl. its infrasturcture, services available and its community) from a social and health perspective. Students are guided to observe and collect information, reflect on and discuss, among other things, issues related to prevalence of disease, the environement within the locality, the socio-economic context, and accessibilty to services, with an emphasis on equity, diversity and health & social well-being within that commnuity.
